Bacterilolgical Study on Cultured Vegetables of Several Markets in Gwnagju City

Abstract
This experiment was carried out to evaluate the sanitary quality of cultured vegetables and to check the removed rate of bacteria by treating methods such as washing with tap water or commercial detergent, or blanching.
Samples si)ch as Cmcumis sativus, Capsicmm annumm var, acuminatum Chrysanthemum coronariurn, Daucus carota var. sativa Leaf of Perilla fruteseens, Allium odorum and Lactuca sativa were collected from the major markets located in Gwangju city during the period from May to September in 1984.
Fecal coliform MPN was ranged from less 30 to 930,000 per 1000 grams of samples examined while plate count was from 1.9. ¡¿ 10^(3) to 1.6 ¡¿ 10^(3) per gram. Usually contamination rate of fecal coliforin of leaf vegetables was much higher than that of fruit vegetables.
In the monthly experiments of Lactuca sativa, the number of sanitary indicati e bacteria was highest in August.
Removed rats of bacterial density of vegetabLs by washing three times with tap water was about 20% in leaf vegetables, about 65% in fruit vegetables, and in leaf vegetables that was about 80% by washing with a commercial detergent.
Survival rate of viable cell count of leaf vegetables was less than 0.1%o after blanching for one minutes in boiling tap water.
Compositions of coliform group were 18% EscheericWa soli group, 18% Citrobacter freundii group and 64% Klebsiella aerogenes group, Eschaerichia coli group, type ¥° was 15% in total.
The confirmative rate of coliform group was about 80% in the IMViC reaction with BGLB gas positive tubes in various vegetables.
